OK here's a puzzle for you, and no it's not about catholic theology.

(Sorry Sesh, I know you were whetting your chops)

I opened this bottle of crappy wine tonight. OK let me clarify this. It is NORMALLY a bottle of crappy wine, a pink kind of shit from a local winery, kinda sweet and usually crap that I would not care to drink. My housemates are the sorts that like Asti, Pink Catawba, Sangria, etc. (shudder)

But, alas, tonight the wine cellar was bare, except for this swill, which my housemates say has sat in the basement too long and should be thrown out.
I considered long and hard because today was the kind of day after which one needs some fruit of the vine, nasty or otherwise.

Now silly me, I always heard that people kept wine in cellars for the exact PURPOSE of aging them. And I hate to toss food and beverage because it MIGHT be bad without at least testing it. It's wasteful.

Long way around to say:

I opened the swill and found it had aged into something much nicer that actually tastes like port! So I don't know what the hell they did to this that turned it from swill to semi palatable wine, except perhaps Jesus has been in the basement.

Any other theories?

I had some Aussie organic port last week. No preservatives
or additives. This was recommended to me by a guy who has
major sulphur allergy, of which sulphur gives me a little bit
of grief too. But not enough grief to stop drinking red wine ! lol..

To cut to the chase, like SS's amazement, I was expecting this
stuff to taste like satans sack sweat, yet it actually was like
a nectar of the gods !!!! At 17% alcohol and so delicious, that
bottle vanished and Mark was extremely jolly !

But heres the even better part, after the inevitable crash out,
I woke up next day feeling great, no headache, no hangover,
nothing !!! It was wonderful.

With the conversion rate you could get a bottle for around $16 ??
If the shipping is not expensive, give it a go, great port and no
hangover... ;)

I've had some great wines from your neck of the woods, Mark! Organic wine is the way to go, IMO!

Organic wine is the ONLY way I can go. Allergic to Sulfites, which are in most of the shit.

Not always easy to find though and usually expensive when you do.... which is why I stick to beer most of the time. :gulp:

I should add, that although listed as a "Port" its more
a cross between a good red and a Port. Not quite
as heavy as your full blown ports. So its not hard to
drink more than one glass ;)
