I can imagine ice cream making it a bit milder. Just like dairy products like cream in food makes the taste milder.
The ice cream gives the Guinness just a little bit of sweetness and gives it a more creamy texture. It's surprisingly good.
I was drinking Newcastle Brown Ale the other day while fishing. It tastes like it does have some sugar in it. It's kind of a weird brew. What the hell, I might dump some ice cream in some and see how it goes.
