Fuck! I had to look it up to be sure. But you're right. Although they are very similar sauces. Hollandaise is used on eggs benedict or a side dish of asparagus, Bearnaise on steaks. Both delicious I might add. Point being....NO KETCHUP!

I have seen Safron once, held it in my hand, someone was cooking a beef stew that called for safron supposedly the worlds most expensive spice.

I really couldn't tell what flavor it emparted to the dish.

Someday, I wouldn't mind trying something else with it in it to find a more distinct flavor that I can relate too.

I know it is called for in a bouliabaise, but I have never had a true bouliabaise (sp) I know there is a 12 seafood item theory or some # that makes it a true bouliabaise.

People argue about the true ingredients of the main dish items,

I have had many Chipinos wich is a lesser ingredient copy of the bouliabaise .

Some call it fishemans stew that has a tomato base.

I can eat that all day long.

I love both Cioppino and Boullibaisse. Infact, I have two excellent recipes for both of them. Check out my cooking thread in a bit cos I'll post them. Yes, cioppino is more of a stew. Infact, it was created by local fishermen in San Fransisco during tough times (kinda like now!!!) where they'd all share their collective catches at the end of the day, throw 'em all together with veggies to feed their families. It's definitely very hearty and beyond stew like. Fucking delicious.

As for boullibaise, it's more brothy and yes safron's a key flavor to the broth. Hence, it's orange color.

Yup, Hellman's and Best Foods are excactly the same product. I dunno why but west of the Mississippi River Hellman's becomes Best Foods. Even their commercials, jingles are identical just with different names. It's funny.

On the line, right before the steaks are delivered the chef uses a calking gun full of butter and squirts it atop the steak.

We have Hellman's here in Texas, and we're west of the Mississippi. I've never seen Best Foods on the supermarket shelf.
